Chemex

Chemex is equally suited for brewing a single large mug or preparing coffee to share with friends.
How to Brew Coffee with a Chemex
The grind should be slightly coarser than for a V60 and resemble coarse sugar.
A grind that's too fine may slow the drawdown and create bitterness, while a grind that's too coarse can result in under-extraction.

Recommended Starting Recipe:
  • 30 g coffee
  • 500 ml water
Use this recipe as a starting point and adjust it to match your personal preference.

How to Brew?

  • Place the paper filter into the Chemex and rinse it thoroughly with hot water.
  • Discard the rinse water from the brewer.
  • Add the ground coffee and gently shake the Chemex to level the coffee bed.
  • Begin with the bloom:
    • Pour 60–70 g of water.
    • Wait 30–40 seconds.
    During the bloom, carbon dioxide trapped inside the roasted coffee is released, allowing for a more even extraction.
  • Continue pouring the remaining water slowly in small circular pours until you reach your target brew weight.
  • Once all the water has passed through the coffee bed, remove the filter.
  • Tip
    Before serving, gently swirl the brewed coffee inside the Chemex. This helps mix the different layers of extraction, creating a more balanced and consistent flavor—especially when brewing multiple cups.

Characteristics
    • We recommend using freshly ground coffee whenever possible. Ground coffee gradually loses aromatic compounds that contribute to flavor and aroma.
    • The thick Chemex filter captures more oils and fine particles, producing an especially clean and refined cup.
    • Always rinse the filter thoroughly with hot water before brewing. This removes any paper taste while preheating the brewer.
  • For a lighter, cleaner cup
    • Use a slightly coarser grind.
    • After the bloom, brew using two main pours.

    For example, with 500 ml of water:
    • 70 ml — Bloom
    • Pour to 300 ml
    • Pour to 500 ml

    This approach emphasizes clarity, elegance, and brightness.
  • For a sweeter, fuller-bodied cup
    • Use a slightly finer grind.
    • After the bloom, brew using three main pours.

    For example, with 500 ml of water:
    • 70 ml — Bloom
    • Pour to 220–250 ml
    • Pour to 380–400 ml
    • Pour to 500 ml

    The additional pour promotes a more even extraction, often resulting in greater sweetness, balance, and body.
Experiment with Grind Size
    • If the coffee tastes too sour or watery, try using a slightly finer grind.
    • If the coffee tastes too bitter or heavy, try using a slightly coarser grind.
  • Even a small adjustment to grind size can noticeably change the flavor of your coffee.
